As I've had plenty of time on my hands recently, I've spent some of it tidying up and editing bits of my blog. Sport science, running, armchair philosophy and more... andrewrenfree.wordpress.com/
Great analogy!
Zone 2 is like vegetables: the best thing you can eat, but not the first to sort out. A salad leaves you hungry.
First, enough training stimulus. Then, the best zone for it. With 4 hours a week, that's intervals.

Why decide in advance how many intervals to run? Do as many quality reps as possible, then stop when form or pace deteriorates.

Proper interval training is like being an artist.
You have all of these variables (speed, recovery, rep length, set length, pacing, etc.) and each twist, changes the stimulus a bit.
You can do 100m repeats that work on speed or aerobic endurance.
Be an artist, get innovative.
A training zone isn't a physiological reality. It's a model.
Useful models can help us make decisions. They shouldn't become the thing we're trying to train.
There is no optimal training programme.
There are training principles. There are useful evidence-based strategies. There are better and worse decisions.
But there isn't a universal recipe.
