Tonight we are pairing a #vegan pizza w @BBranchWinery 2017 Tallent Vineyard Tannat. Tannat, which can be heavy & tannic, is beautifully expressed. Mocha & chocolate cherries. Secret ingredient in the pizza: shallots. #TXwine #wininghourchat @WriteforWine #winelover

Sipping @BBranchWinery 2017 Tallent Vineyard Tannat. This is a big, bold, rich red with notes of mocha, deep raspberry and blueberry. From the Texas Hill Country, this is a knockout @WriteforWine #wininghourchat @IFWTWA @CoriSolomon #winelover

Tannat is not a grape that comes to mind when I think of rose so I'm fascinated with this virtual happy hour feature that @BBranchWinery in Texas is going to do with their Tannat rose!

2/2 #txwine The wines were made by @PedernalesWine, @BBranchWinery and @calaiswinery. That was a special day!! Then we took a field trip to @BBranchWinery and heard a lecture by Dr. Bob. So memorable. Changed my mind about Texas Cabernet Sauvignon.

I was just looking at the wines I tasted with @VintageTexas for the Specialist in Texas Wine class that was held in June 2018 at @BBranchWinery. Among MANY other #txwine-s, we got to taste 3 2015 Cabs grown by N. Newsom but made by diff producers 1/2...
4. 2015 Cabernet Sauvignon notes FL for “flash”. Those extracted tannins are well suited to handle the 100% New American oak (Dr. Bob is a Kentucky native). It’s a component. Not the star. That would be the fruit.
Flash Détente thermovinification heats the grapes to short of pasteurization point before a vacuum chamber that flash cools them in seconds. The process explodes the vacuoles in the skins of the grapes, extracting nearly 100% color and tannin. #txwine #flashdetente

3. 2015 Cabernet Sauvignon, Newsom Vineyards: 100% Cabernet, 100% #flashdetente, 100% New American Oak, 100% Texas High Plains. #txwine
2. 2015 is one of Dr. Bob Young's favorite vintages of this wine, maybe even is fave. Although the 2010 that won the San Fran Double Gold probably is tops. #TXwine #cabernetsauvignon
