In November 1984, 17-year-old Lisa McVey was riding her bike home after a double shift at a donut shop in Tampa, Florida. Out of nowhere, a man dragged her off the bike and forced her into his car. He blindfolded Lisa, pressed a gun to her head and drove to his apartment. For the next 26 hours, he raped and tortured her. The girl believed she was going to die. But she was determined that if she did, police would catch the man who killed her. So she paid attention to everything. She peeked under her blindfold whenever she could, counted the steps up to his apartment and pressed her fingerprints onto every surface she could reach in his bathroom. She also kept him talking and promised to be his girlfriend. She even made up a story that her father was seriously ill and depended on her. Slowly, it worked. After 26 hours, he drove her back toward her grandmother's house and apologized. Then he told her “Tell your father he's the reason why I didn't kill you." Every detail she had memorized, from his car to his apartment to the ATM he had stopped at, led police straight to him. His name was Bobby Joe Long. That year, he killed at least 10 women in the Tampa area. He was arrested on November 16, 1984, and later sentenced to death. Years later, Lisa joined the same sheriff's office that caught him and became a deputy who helps survivors of sexual violence. In 2019, when Long was executed, she sat in the front row.

The citric acid in your food is grown on a black mold. Pfizer figured out how to mass produce it and it's how Pfizer learned to make penicillin. Nearly all of it, about 2 million tons a year, comes from a fungus called Aspergillus niger fed sugar in steel tanks. The mold eats the sugar and gives off citric acid. The acid gets filtered off, crystallized and sold as a white powder. A Pfizer chemist named James Currie got it running at scale in 1919, and by 1939 a pound had gone from $1.25 to 20 cents. The deep tanks Pfizer built for citric acid are the ones it used for penicillin in 1941, when it was the only company making it by fermentation. About 60% of it is made in China, and the US has had tariffs on Chinese citric acid since 2009 at the request of ADM, Cargill and Tate & Lyle. Sprite, Gatorade, Hunt's tomatoes, Kraft mac and cheese, Pillsbury frosting and the liquid eggs on a hotel line all have it. It's the most used acid in food because it's cheap, it's sour, it keeps cut fruit from browning, and it holds pH where bacteria don't grow. A 2018 paper described 4 people who reported joint pain and swelling after eating foods with manufactured citric acid, but the authors wrote that nothing had been proven. No large scale controlled study has been run since.

McDonald's uses 3 different eggs. Only 1 of them is cracked in the restaurant. The Egg McMuffin gets a Grade A egg cracked into a ring on the grill. The Big Breakfast scramble is poured from a carton of eggs and citric acid. The folded egg on the biscuits and McGriddles is eggs, nonfat milk, modified food starch, salt and citric acid. A supplier cooks it, folds it and flash freezes it. The store warms it on the grill. Citric acid keeps a cooked egg from going gray on a hot hold, and the starch holds water in a patty that's been frozen and thawed so it doesn't weep on the biscuit. The milk adds volume and softens the bite. McDonald’s purchases over 2 billion eggs in the US and Canada a year.

Hi @MichaelsStores, is this true? You refused to frame a picture of Trump? Is it story policy to target conservatives?
. @MichaelsStores refused to custom frame three things for me: my favorite image of President @realDonaldTrump, a @McNaughtonArt piece, and an original moon landing newspaper. Apparently "custom framing" now means the clerk approves your art first. Is that corporate policy, or just one employee's politics?

Skinless hot dogs had a skin. The plant peeled it off. Oscar Mayer and Ball Park skinless franks start the same way. The meat is chopped with ice, salt and cure into a smooth batter, then pumped into a long cellulose casing, a tube of plant fiber that isn't meant to be eaten. The tube gets twisted into links, hung on racks, smoked and cooked until the batter sets. Then it goes through a chiller and into a peeler, where a blade slits the casing and a jet of air strips it off. The casing goes in the trash and the hot dog goes in the package. The hot dogs with snap are the ones that kept the casing, sometimes sheep intestine, and the label has to say if it came from a different animal than the meat. The federal standard for a hot dog allows up to 30% fat, or 40% fat and added water combined, plus 3.5% binders like nonfat dry milk or cereal.

Mission flour tortillas have 11 ingredients. A tortilla needs 4, flour, water, fat and salt. The bag lists enriched bleached flour, water, vegetable shortening made from interesterified and hydrogenated soybean oils, then 2% or less of salt, sugar, baking soda, sodium acid pyrophosphate, distilled monoglycerides, fumaric acid, calcium propionate and sorbic acid. The shortening is soybean oil that was hardened in a reactor so it acts like lard at room temperature. Baking soda and sodium acid pyrophosphate are a baking powder split in two, so the tortilla puffs on the hot plate in the plant. Distilled monoglycerides are an emulsifier. They keep the starch from going stale and hard, which is why a Mission tortilla is still soft weeks after you bought it. Fumaric acid drops the pH, and calcium propionate and sorbic acid stop mold in a bag that isn't refrigerated.
