These should be big and plump, like the one in the picture. This is an extremely simple recipe, the only way to mess this up is to over cook them. They cook very very quickly!
Moules marinière. Scrub and debeard about two pounds of mussels, discard any that won’t close when tapped. Sauté a chopped shallot and three minced garlic cloves in two tablespoons of butter over medium heat for about two minutes. Add a cup of dry white wine — sauvignon blanc or pinot grigio — and a handful of chopped parsley, bring to a boil, then toss in the mussels. Cover and steam four to five minutes, shaking the pot once, until they open. Discard any that stay shut. Finish with a squeeze of lemon and serve with crusty bread for the broth. The whole thing takes about fifteen minutes.
One trick worth knowing: save the steaming liquid, strain it, and reduce it with a little cream for a sauce that works on pasta or grilled fish the next day.

Remember that pot roast from last night, this is my favorite part.
Pot roast sandwiches with provolone, giardiniera pepper medley and Au jus for dipping. Hands down my favorite sandwich!
Pot Roast, I threw in some portobello’s just because I had them.
I actually like the sandwich’s I will make tomorrow with the leftovers better than this plate.
I’ve been getting a lot of requests for breakfast and brunch dishes lately. Since I don’t typically eat breakfast or lunch I decided to do breakfast for dinner tonight. This is a ham, cheddar cheese, mushroom and spinach omelette and avocado & egg toast. Recipe for the avocado toast in the comments. Traditional Pot Roast is on the menu for tomorrow night!
• 1 thick slice sourdough or crusty artisan bread
• ½ ripe Hass avocado
• 1 tsp fresh lemon or lime juice
• Pinch of kosher salt and freshly ground black pepper
• 1 large egg
• Butter or olive oil (for toast and/or pan)
• Flaky sea salt (e.g., Maldon), to finish
• 3–5 thin slices fresh jalapeño (seeds removed for milder heat, or left in for more spice)
• 2–3 thin slices or a small handful of pickled or raw red onion (pickled is especially good)
• 1–2 tsp capers, drained and lightly rinsed if very salty
• Optional extras: chili flakes or a small spoon of chili crisp, microgreens or arugula, drizzle of good olive oil
Quick assembly notes
1. Toast the bread until golden and crisp. Optionally butter it or rub with a cut garlic clove while hot.
2. Mash the avocado with the lemon/lime juice, a pinch of salt, and black pepper. Spread it on the toast.
3. Cook the egg sunny-side up or poached (runny yolk preferred).
4. Top the toast with the egg, then scatter the jalapeño slices, red onion, and capers.
5. Finish with flaky salt and any optional chili or greens. Serve immediately.
Tip: Because the capers and red onion already bring salt and brightness, go easy on extra salt until you taste. The jalapeño adds fresh heat that pairs especially well with the creamy avocado and runny yolk.

Yesterday’s HUGE rally in Highland Heights, Kentucky was truly amazing. President Trump was at the podium for nearly two hours and his energy was indescribably electrifying! I had the great opportunity to meet a true MAGA icon @Brick_Suit. It’s Patriots like him who have made the movement what it is today! I’ve been 💯 MAGA since the golden escalator and I have zero regrets. I’ve voted for him three times and I would vote for him three more times if I could!
