The level of detail they added into the remake is insane. I've also noticed what seems to be the bones of Majora's Mask mechanics. If they don't follow this up with an MM remake, they're crazy. (I say this as someone who isn't a big fan of MM.)

I'm LOVING Ocarina of Time so far! I'll share some impressions though I'll try not to be too spoiler-y. What I like so far (beyond the obvious): - Not *entirely* 1:1, but close - New cutscene music! - The change in atmosphere in Kokiri Forest after clearing the first dungeon

Okay, I've cleared the Forest Temple so I obviously haven't kept up with this and likely won't. I will say I'm overall extremely happy with this remake, but I've noticed after the time skip a lot of the stuff is made easier/dumbed down compared to the previous versions.
