Third: eat good fats. Monounsaturated ones. Our body needs omega3 - fats! That is the reason the mediterranean diet performs well study after study. DHA fats make up 60% of our brain. And most of us are not getting enough.

What to fix? First, we all get too little fiber. Fiber feeds your gut microbiome and that way affects your overall health in countless ways.
We must take action ourselves and not expect regulators to act. The changge begins in your own home.
Our food industry uses about 10.000 approved additive chemicals. The majority of them have not been tested on humans. But we have tests proving that manny of those have a negative impact on our gut microbiome!
Ultra processed foods have loads of sugar, salt and bad fats. Sugar is a gut lining disruptor. Salt depletes the useful lactobacilles by 90%. Wrong kinds of fats don't feed our brain the right way. Even two of these three in excess amounts causes overeating in tests.
The average adult spends 90% of their time indoors: in a man-made, sterile environment, as opposed to nature, surrounded by microbes.
For every 10% of ultra processed foods in your diet, you death risk rises 14%. And many folks get over half of their daily calories from ultra processed foods. No wonder we see auto-immune disease (10%), allergies 30%) and chronic inflammation in the population.

The hardest part of growing your food is preserving it. Not planting or weeding.
Picking and processing what you grow is the most laborious part of the thing!
Wash, boil, peel, shred, prep the pickling stock, dry...
And the stuff has a dishesrtening tendency to shrink 😂
The harvesting is almost done, and mushroom and berry season is over. So I have plenty of time to snuggle in the couch with the fire roaring and read....
