Thai Chicken Meatballs in Coconut Curry
Serves: 4 | Prep: 25 min | Cook: 30 min
Ingredients
For the chicken meatballs:
1 lb ground chicken (or ground turkey)
1/2 cup panko breadcrumbs
1 egg
3 tbsp red curry paste
2 tbsp cilantro, finely chopped
2 cloves garlic, minced
1 tbsp fresh ginger, grated
1 tbsp fish sauce
1 tsp lime zest
1/2 tsp salt
1/4 tsp black pepper
2 tbsp oil for searing
For the coconut curry sauce:
1 tbsp coconut oil or olive oil
1 small onion, finely diced
3 cloves garlic, minced
1 tbsp fresh ginger, grated
3 tbsp red curry paste
1 can (14 oz) full-fat coconut milk
1/2 cup chicken broth
1 tbsp fish sauce
1 tbsp brown sugar or palm sugar
1 tsp lime juice
1/2 tsp turmeric (optional, for color)
1/2 cup cherry tomatoes, halved (optional)
1/2 red bell pepper, thinly sliced (optional)
Salt, to taste
For serving:
Steamed jasmine rice
Fresh cilantro leaves
Thai basil or mint
Sliced red chili
Lime wedges
Instructions
1. Make the meatballs
In a large bowl, combine ground chicken, panko, egg, red curry paste, cilantro, garlic, ginger, fish sauce, lime zest, salt, and pepper. Mix gently with your hands just until combined — overmixing makes them dense.
Roll into 16-18 meatballs, about 1 1/2 inches each. Wet your hands slightly to keep the mixture from sticking.
2. Sear the meatballs
Heat oil in a large skillet over medium-high heat. Add the meatballs in a single layer (work in batches if needed) and sear for 2-3 minutes per side, until browned all over. They don't need to be cooked through yet. Transfer to a plate.
3. Build the curry sauce
Lower the heat to medium. In the same skillet, add coconut oil, then the onion, and cook for 3-4 minutes until softened. Add garlic and ginger and cook 30 seconds until fragrant.
Stir in the red curry paste and cook for 1 minute, letting it bloom and darken slightly.
4. Simmer
Pour in the coconut milk and chicken broth, whisking to dissolve the curry paste. Add fish sauce, brown sugar, lime juice, and turmeric. Bring to a gentle simmer.
If using, add the bell pepper and cherry tomatoes now.
5. Finish the meatballs
Return the meatballs to the skillet, nestling them into the sauce. Simmer gently for 10-12 minutes, turning once or twice, until cooked through (165°F internally) and the sauce has thickened enough to coat a spoon.
Taste and adjust — more fish sauce for salt, sugar for balance, lime for brightness.
6. Serve
Spoon over steamed jasmine rice. Top with cilantro, Thai basil, sliced red chili, and a squeeze of lime.
Tips
Chill the meatball mix for 15-20 minutes before rolling — they hold their shape much better and sear cleaner.
Don't boil the sauce once the coconut milk is in; a hard boil can make it split. Keep it at a gentle simmer.
Curry paste varies wildly in heat. Start with 2 tbsp in the meatballs and 2 tbsp in the sauce, then adjust. Mae Ploy and Maesri are good, punchy brands.
Make it soupier: add an extra 1/2 cup broth and serve in bowls over rice.
Add vegetables: zucchini, snap peas, or baby spinach stirred in during the last 5 minutes all work well.
Meatball swap: ground pork or a pork-chicken mix gives a juicier result.
Make ahead: sear the meatballs and blend the sauce a day ahead; simmer together before serving.

Lemon Bliss Cake
Serves: 10–12 • Prep: 25 minutes • Bake: 45–55 minutes • Chill: 1 hour optional • Total: about 1 hour 20 minutes
Ingredients
For the cake
1/2 cup unsalted butter, softened
1 cup granulated sugar
4 large eggs
1 tsp vanilla extract
1 tbsp lemon zest
2 tbsp fresh lemon juice
1 cup whole-milk ricotta or cream cheese, softened
1/2 cup sour cream or Greek yogurt
1 1/4 cups all-purpose flour
2 tbsp cornstarch
1 1/2 tsp baking powder
1/4 tsp salt
For the lemon filling pockets
1 1/2 cups lemon curd or thick homemade lemon filling
1 tsp cornstarch, optional if your lemon curd is a little loose
For finishing
Powdered sugar, for dusting
Whipped cream or mascarpone, optional
Thin lemon slices or small lemon segments
Mint leaves, optional
Instructions
1. Prep the pan
Preheat oven to 325°F (165°C).
Grease and line an 8-inch round or square cake pan with parchment.
2. Mix the dry ingredients
In a bowl, whisk together flour, cornstarch, baking powder, and salt.
3. Make the batter
In a large bowl, beat butter and sugar until light and fluffy, 2–3 minutes.
Beat in the eggs one at a time.
Mix in vanilla, lemon zest, and lemon juice.
Add ricotta and sour cream and mix until smooth.
Fold in the dry ingredients just until combined.
4. Layer the cake
Spread half the batter into the prepared pan.
Spoon lemon curd over the batter in thick dollops, leaving a small border around the edges.
If the curd seems thin, stir in the optional cornstarch first.
Cover gently with the remaining batter and smooth the top.
5. Bake
Bake for 45–55 minutes, until the top is lightly golden and the center is just set.
A tester inserted into the cake part should come out mostly clean. Avoid testing directly in a lemon pocket.
Cool in the pan 15 minutes, then transfer to a rack.
6. Chill or serve
For the neatest slices like the photo, let the cake cool fully, then chill 1 hour before slicing.
Dust generously with powdered sugar.
7. Finish
Top with small dollops of whipped cream or mascarpone.
Garnish with lemon pieces and mint if you like.
Tips
Use thick lemon curd so you get creamy pockets instead of a runny center.
Don’t overmix the batter or the cake can lose its soft texture.
Baking at a slightly lower temperature keeps it tender and helps the creamy filling stay luscious.
This cake is best slightly cool or at room temperature.
Easy homemade lemon filling
If you want to make the lemon filling from scratch:
2 egg yolks
1/3 cup sugar
1 tbsp cornstarch
1/2 cup water
2 tbsp lemon juice
1 tbsp butter
1 tsp lemon zest
Whisk everything except butter together in a small saucepan. Cook over medium heat until thick. Stir in butter and cool completely before using.
Storage
Refrigerate covered for up to 4 days.
Dust with powdered sugar right before serving for the prettiest finish.

We are at the beginning of the golden age of art culture on the XRPL.
This one started with a different kind of energy.
I wanted to create something that felt powerful, wild, and a little dangerous something that could carry the spirit of the $ARMY while still feeling like my own world.
The armor, the chaos, the creature underneath it all… it slowly came together through the lines until ARMY OF CHAOS finally showed itself.
A little tribute to the warriors who keep pushing forward.
