PoEM more accurately measures work.
Proof-of-Work limits how "heavy" a block can be, treating all blocks that exceed the difficulty threshold as equal.
PoEM weighs blocks beyond the difficulty threshold, to ensure that even if two valid blocks are proposed simultaneously, one will always be "heavier" than the other.
With this change, the way total difficulty is measured also changes. Proof-of-Work uses a linear growth of total difficulty (additive) while Proof-of-Entropy-Minima uses an exponential growth of total entropy (multiplicative).
The result ➡️ no consensus based forks & faster finality, which both act as prerequisites for the ability to coordinate an infinite number of execution shards.

"In a fully asynchronous message-passing distributed system, in which at least one process may have a crash failure, it has been proven in the famous 1985 FLP impossibility result by Fischer, Lynch and Paterson that a deterministic algorithm for achieving consensus is impossible."
en.wikipedia.org/wiki/Consen…
@QuaiNetwork's novel Proof-of-Entropy-Minima algorithm practically breaks the FLP impossibility theorem. The only instance in which PoEM can not offer deterministic head selection is in the case of a near-simultaneous hash collision. When using a 2^256 bit field, two machines simultaneously finding the same hash while mining becomes an extreme statistical improbability.
When @mechanikalk says that PoEM alters the concept of consensus entirely, he means it. 👀

Layman's terms: There is a very well respected paper in distributed computing with over 7,000 citations that basically says that it is impossible to do what PoEM is currently doing in testing. The only reason PoEM doesn't completely break the theorem is because there is a theoretical possibility, even under PoEM, of two blocks being produced at the same time with the exact same hash -- however, the chances of that happening are so minute that PoEM is deterministic in practical use.
TLDR: Paper in distributed computing says that deterministic consensus is impossible. PoEM offers the closest thing to deterministic consensus that we know of, and is only non-deterministic in extreme cases (simultaneous 2^256 bitfield hash collision).
