To directly address those issues, you could work on efficient desalination, or large scale hydroponics / vertical farming.

Here’s an interesting thing: both of those things are possible today but simply not economical because energy is too expensive. If we make energy significantly cheaper, suddenly we can massively expand desalination and indoor farming.
