A really good restaurant margin (just within the 4 walls with no accounting for home office costs) is 20%. A really good return on cost is a payback within three years. To make that happen on a 5,000 square foot restaurant, sales need to be $144k per week. If half the sales happen on Friday and Saturday nights then sales on those days would need to be $36k. If the restaurant had 150 seats and was dinner only and the tables turned twice on those nights, the check would need to be $120 per person.
