I had a museum for the things I brough home as a child: a dusty old chest of drawers in the barn next to the house. It had peeling veneer, ornate metal looped handles and three deep drawers, to which I assigned a different category of treasure. #mudlarking

Saw a flash of orange while swimming and it was a butterfly, so I scooped it up in my big foamy hand and swam one-armed to keep it above water. Carried it home where it dried off, its wings popped open and it climbed all over me because one of them was broken.

This is a very thoughtful piece on the role of glutamate in wine - what happens through rigorous lees conservation and optimization of its uptake. (But beware, lest the lees digest the wine rather than the more salutary opposite effect.)
Replying to @RandallGrahm
I’ve actually written a companion piece about umami in wine to go alongside the new issue.

If you didn’t see it before here are some more pics of my new knife from @CoteDuPy
Handle made from 60 yo Shiraz vines that had been uprooted as suffering from ‘dead arm’ a disease that partially kills the vine hence the light and dark wood in the same piece.

To replace India Club with a modernised hotel is to wipe away over half a century of history.
Krishna Menon, Secretary of the India League, set up India Club as a symbol of Indo-British friendship. Long may he cast his watchful eye over diners.
