In Lebanon, kibbeh is not one dish but an entire family, and this is its raw, old-school member. Lean meat, fine bulgur and spices are pounded in a stone mortar called a jurn until the mixture becomes almost creamy. Freshness was non-negotiable: traditionally, the meat was slaughtered the same day, and kibbeh nayyeh was prepared when guests deserved something special. It is served with olive oil, mint, green onions and flatbread.
