My parents asked me to have a look at this IPO, so I visited the company's website to check out the prospectus...apparently, it's coming "soon". If any of you are applying for this offer, what are you basing your decision on considering the prospectus hasn't been published?
The LUSE BELL RINGS @OneSquareK1 Opens its IPO offer today, signaling its coming to list on the Lusaka Securities Exchange Plc. The window for investing has been opened. Be part of history for this “once in a lifetime” occasion. @LuSE_Plc #FinancialInsight #Get2Know

The team wanted sliders for dinner, so I used the opportunity to try out the Shokaz spice that I recently received from Zed. Right off the bat, the aroma of the shokaz is fantastic. I used it as a rub on a 1kg piece of pork leg with a little apple juice and put it in a low oven at 140°C for 5 hrs...basically pulled pork. I also made some slaw to go with the pulled pork. The sliders were sensational, to say the least. Give them a try..

Zed coffee is really underrated. If you really want to appreciate coffee, use freshly ground beans. When you do, you'll never drink instant coffee EVER again..

If you have never had pickled pig trotters, you are missing out. Very easy to make...just simmer them with any flavourings of your choice. I used celery, onions, garlic, habanero chillies and bay leaves. After an hour, put them in a pickling jar with some veggies of your choice. Then add the brine mixture of equal quantities of water and vinegar, black pepper corns, bay leaves and garlic cloves. Place in your refrigerator and they will be good to go after 5 days.

I did not smoke the beef sausage. Just remember that whenever you smoke sausages, add curing salt.

I honestly didn't know what to expect, but the way the sausages have turned...I'm on to a winner here. The beef and rape sausage is wild. If you have a Zambian palate, Imagine the taste you get when you tobela a piece of beef into rape. I should have done this a long time ago. Just check out the juiciness of the sausage in F1. As for the tilapia smoked sausages, it is almost impossible for me to describe the taste and smoky aroma. I have just discovered another way to enjoy tilapia.
I kept the sausages in the refrigerator overnight to develop the flavours. Now, I'm smoking the tilapia sausages.I am not using my electric smoker because I wanted to show that this can be done on a kettle bbq. So far, I'm loving the smoke colour on the tilapia sausages. Just a couple more hours to go and it will be time for the taste test. Can't wait..

Today, I was looking forward to having fried tilapia and veggies with my cassava bwali. Unfortunately I couldn't find whole tilapia, so I just bought the fillets not knowing what I would do with them. As for veggies, the closest alternative for rape that we is Gai Lan a.k.a Chinese broccoli. My daughter came up with an interesting solution. She was like, "since you love making sausages, why don't you make fish sausages and find a way to use the gai lan in the sausages." Challenge accepted. I'm going to make fish sausages as well as beef and gai lan sausages. This will be interesting. I'll let you know how it goes.

For the past couple of years, I only eat bwali bwatute or sorghum mixed with finger millet.

Fish sausages are done. Since tilapia is very lean, I added pork back fat to keep the sausages moist. You can leave out the fat, but your sausages will be dry. I also used some cooked rice as a binder. The other ingredients are salt, garlic powder, black pepper, curry powder and freshly chopped parsley. Since, I'll be smoking the first sausages, I added curing salt #1 (sodium nitrite). Curing salt inhibits growth of harmful bacteria during the smoking process. If you are not going to smoke your fish sausages, you can omit the curing salt. Just put the sausages in your refrigerator overnight for the flavours to develop.

Beef & rape sausages done. What I did was to cook the vegetables individually, that way I could control the water content. I blanched the gai lan and squeezed out all the water. Then in two separate pans, I cooked the tomatoes and onions without any oil to concentrate the flavours. The only other ingredients are salt, garlic and black pepper. I don't anything to mask the flavours of the vegetables. Now the sausages will rest in refrigerator overnight for the flavours to develop. Now..on to the fish sausages
